Edible Fortune Boxes

New creation by my mom and now ‘tis passed onto me and into my recipe book. It’s easy to make too and healthy to eat, since it has minimal salt and minimal oil. It’s a very light dish, but you can always adjust it to your taste!

INGREDIENTS:

1 elongated melon

2 cups rice (sticky rice recommended)

1 carrot

1/2 green peas

5-6 large mushrooms (chop the stalk)

1/2 cup corn

1 tsp salt

2 tbsp soy sauce

2 tsp oil

1 egg (optional)

DIRECTIONS:

1. Steam the rice until it softens, or cook in rice cooker (store rice overnight if not using sticky rice)

2. (Beat the egg if you’re using it) Preheat a pan to medium heat

3. Add in the oil, soy sauce and salt and fry the rice until golden color (while adding beatened egg)

4. Add in soy sauce, chopped mushroom, corn, and peas

5. Cut the melon into 2/3 of an inch

6. Stuff the prepared rice into the melons

7. Cover with mushroom cap

8. Place the prepared dish into a pan and steam until the melon is soft at low heat

If the taste is really too plain, you can add more salt and soy sauce! If you want a sauce to go with it, message me and I can give you a sauce that we use with any dishes with melons!

Some of the ingredients in the recipe represent something related to the new year. The corn signifies money or fortune, the green peas signifies good health. Happy New Year!
