I posted a recipe very similar to this one awhile ago… the rice in this recipe is stuffed into tofu skin rather than melons. Do try this if you have time. The tofu skin really adds another level of texture to the dish!

INGREDIENTS:
1 pack tofu skin
2 cups rice (sticky rice recommended)
1 carrot
1/2 green peas
5-6 large mushrooms (chop the stalk)
1/2 cup corn
1 tsp salt
2 tbsp soy sauce
2 tsp oil
1 egg (optional)
DIRECTIONS:
1. Steam the rice until it softens, or cook in rice cooker (store rice overnight if not using sticky rice)
2. (Beat the egg if you’re using it) Preheat a pan to medium heat
3. Add in the oil, soy sauce and salt and fry the rice until golden color (while adding beatened egg)
4. Add in soy sauce, chopped mushroom, corn, and peas
5. Stuff the prepared rice into the tofu skins
6. Place the prepared dish into a pan and steam until well cooked
Feel free to use other veggies, like spinach or celery in the recipe. This dish really makes good finger food and great for parties, since you can make it in a large patch!
